Cayuga Pure Organics is a certified organic farm founded by longtime Ithaca farmers Erick Smith and Dan Lathwell, that produces not micro-greens and heirloom tomatoes, but staple food crops—oats, barley, buckwheat, rye, several varieties of wheat and corn, many varieties of dry bean, and a range of flours and meals ground from those grains. CPO uses no pesticides, no artificial fertilizers and no GMO's, and is actively engaged in continuing research into sustainable farming practices. The difference all this makes to the quality of the food can't be overstated—Cayuga's products are not neutral starches hoping for some tasty gravy, they are grains with character, that taste like they could have been the basis of civilization, as indeed they were. Nor can we overstate the importance of Cayuga's contribution to the food system—they are making a vital incursion into the virtual monopoly Big Food has over the production of grain.
