Local, sustainably and humanely raised, high quality, fresh, beautifully butchered and dressed meat finally comes to Manhattan, thanks to owner Jake Dickson, butcher Adam Tiberio and chef Gabriel Ross at Dickson's Farmstand Meats at the Chelsea Market. Everything in the case is labeled with its farm of origin, which all must meet the following standards: 1) That the entire supply chain, from farm to point-of-sale, be no more than 400 miles; 2) that no animal-based feeds, prophylactic antibiotics or hormones are ever used; 3) that the animals spend their lives on the farms—no CAFO's or feedlots. And on top of the spectacular quality of the meat on display, chef Ross is now producing wonderful charcuterie, including sausages, patés, rillettes...treat yourself to the lamb pastrami!
