But Chef Juventino also has a secret weapon: his grandmother. It was in her kitchen that he learned to make the fresh, delicate tortillas that are the basis of some of his most exciting dishes. On a recent Saturday night the three-taco special featured chicken, pork and lamb from whole roasts, each simply garnished to highlight the star player, all served with a take-no-prisoners chipotle salsa.
