Peter Hoffman, Savoy chef/owner and Slow Food supporter, is the dean of New York City regional farm-to-table eating. His eclectic, often Mediterranean-influenced, seasonal menus are testaments to the gustatory wonders that can be worked with ingredients from Union Square Greenmarket and other regional farmers. On Union Square market mornings, you usually will find Peter filling the pallet of his famous bicycle with each season’s best. But Savoy is more than a great meal. Peter’s special theme dinners, often with guest farmers and food scholars in attendance, are rare opportunities to eat well and learn about the food chain.
